What does Yakuzen Curry Shinkai consider “yakuzen”?

We use a rich variety of spices and herbs. Our concept of yakuzen cuisine is to select ingredients that do not burden the gastrointestinal tract from the viewpoint of digestion and absorption, and to pay particular attention to cooking methods such as gluten-free and raw oil. We use 10 kinds of vegetables, which are important for maintaining good health, and pickles, a fermented food, are used as a side menu, considering the gastrointestinal tract.
